60ml Cuckoo Sunshine Gin
20ml Lemon Juice
20ml Honey Syrup
25ml of Egg White
15ml Amaretto
Garnish with freeze dried raspberries
Method
Add all of the ingredients to a cocktail shaker. Add ice and shake fast for 20 seconds, double strain into a pre-chilled coupe glass.

Honey infused with mouthwatering raspberries gives a fresh summer taste. This is a traditionally distilled gin, which is strong on juniper and lemon, almonds and vanilla give a creamy, nutty and sweet taste, whilst angelica, orris, cinnamon and orange keep it nice and traditional.
